Farm-to-table on Vejrø is an uncompromising approach to taste, quality, and transparency, where ingredients are grown on the island, harvested in season, and treated with respect for nature, time, and craftsmanship. What we cannot produce ourselves in sufficient quantities, we source from carefully selected local farms in the surrounding area.Here, the meal reflects the landscape, the season, and the tranquility that only an island can provide.
Flavors shaped by time and season
We let nature set the direction and work with what is growing, ripening, and tasting best right now. For us, seasonality is not a limitation, but a way to create variety in our food. As the ingredients change with the seasons, our cuisine changes with them. Some things can (and should) be enjoyed here and now. Others we allow to develop over time. That is why we preserve and ferment seasonal ingredients when they are at their peak, so that their flavor and nutrients are preserved.At Vejrø, a meal is not something to rush through, but a moment to slow down and open your senses.

It is a conscious way of rebuilding and harvesting – where respect for nature creates the foundation for what ends up on the plate. Our farmers on the island take great care to give back more than we take.
